Ingredients

Coriander, Pepper, Fennel Seeds, Shajira, Cloves, Cinnamon, Cardamom, Star Anise, Kapok Buds, Mace Spice, Biriyani Leaves, Black Cardamom, Stone Flower, Nutmeg, and Rose Petals.

How to Prepare or Use

  1. Marinate the Meat or Vegetables:
    Mix 1–2 tablespoons of Venjanam Biriyani Masala Powder with yogurt, ginger-garlic paste, lemon juice, and salt. Coat your choice of chicken, mutton, vegetables, or seafood in this marinade and let it rest for at least 30 minutes.
  2. Cook the Meat/Vegetables:
    Heat oil in a pan, sauté sliced onions until golden, then add the marinated meat or vegetables. Cook until tender, adding a little water if necessary. You can add extra biriyani masala powder during cooking to intensify flavor.
  3. Prepare the Rice:
    Wash and soak basmati rice for 30 minutes. Boil water with whole spices (cardamom, cloves, cinnamon, bay leaf) and salt, then cook the rice until it's 70-80% done. Drain and set aside.
  4. Layer and Steam (Dum Cooking):
    In a heavy-bottomed pot, layer the cooked meat/vegetable mixture with the partially cooked rice. Optionally, add fried onions, chopped coriander and mint leaves, saffron soaked in warm milk, and a drizzle of ghee. Cover tightly and cook on low flame for 15-20 minutes to allow the flavors to meld.
  5. Serve Hot:
    Gently fluff the biriyani before serving. Enjoy the fragrant, spicy, and richly layered biriyani made easy with Venjanam Biriyani Masala.
